Herb-Crusted Pork Loin Roast

This along with {Jones' Baked Veggies} was our Oscar meal. We just LOVE awards shows around here, so much fun to watch! 

It was when I was making this meal that I kind of had a revelation. I'm COOKING!! Not just hamburger meat, but Herb-Crusted Pork Loin Roast!! Holy cow! It was a good feeling to say the least! The name was just so fancy sounding :) I know I'm not a huge chef, nor will I ever be, and I'm ok with that....As long as I can go into a kitchen and be comfortable in my skin is what this whole challenge is about. I will still have to look up conversions and I am hopefully going to end this year with making my own made up recipe. Here's to hoping!! 

Anyways, about the herb-crusted pork loin roast... As if you couldn't tell, I'm obsessed with 6 Sisters' Stuff and is just another one of their phenom recipes. It can be found {HERE} and it tasted amazing. I halved the recipe for only 1lb of pork loin. With my time I just took about 5 minutes off and kept an eye on it. I don't have a meat thermometer {well, I do, but it was cheap and I don't know how to use it....} so I cut it to check on the middle.

Chicken Dumpling Casserole

Who just doesn't love a good 'ol casserole? This simple recipe was so good and reminds me of good times. No time in particular, just gives you that warm and fluffy feeling inside :)

A couple notes: I didn't read her "updated" version until after I went shopping {I've GOT to stop doing that!! :/ }, and I had no bouillon. So, when I was boiling the chicken I seasoned the water with plenty of salt, pepper, onion and garlic powder and rosemary. I don't even know if those things go well together, but it turned out wonderfully, so I'm not going to second guess my decision! I also added celery to give it a little pot pie feel. Such a delicious and heart warming meal! You must try it on our next chilly day.

I made this for one of mine & Jake's Lost nights. We, um, may have watched 8 episodes in one night. It was just getting too good! Such an easy little meal for our TV night together!!

This recipe gave me the idea to make a breakfast version of this. Like a McDonald's McGriddle version type thing with sausage, pancake and syrup! Hey-O! I'm gonna try and make that version soon!!

Jones' Baked Veggies

I got this recipe from my friend Kevin, who if I'm not mistaken, got it from his parents. So Jones' seemed to be fitting title for this. Nothing crazy, just a simply healthy veggie dish! I was so excited when I went to shop for this. I LOVE produce. It is such a beautiful thing to look at. One day I hope to have my very own garden...ya know when I retired and have a spare second...haha. I just love shopping for fresh produce, frozen is convenient, but fresh is just the way to go!

The Goods: 
Olive Oil
S & P 
Veggies: You could use any kind you could imagine!! I used...
2 Bell Peppers
2 Yellow Squash
1 large {or 2 small} Zucchini
1/2 Onion

Preheat your oven to 350
Cut all your veggies {de-seed if needed} into even size chunks and spread them over a cookie sheet with sides
Drizzle with olive oil and coat those puppies with salt & pepper, like more than you would think! 
Bake for about 25 minutes and you've got yourself a delightful side dish. 

I thought we'd have plenty of leftovers from this to use on a pizza later this week, but 3 of us demolished it all! {I feel like when you eat healthy you seem to demolish what you can!!}

Pan-Fried Ribeye Steak

Molly got so envious of Jake & mine's V-Day dinner, that I decided to treat her with some ribeye. I used this recipe {HERE}. I'm not going to lie, I like V-Day version better....this seasoning was a little too salty for me :( So, if you are going to use one, use {THIS ONE}!! 

I even double checked to make sure I didn't use too much seasoning, and I didn't {according to the recipe}. It was still a wonderful dinner between us sisters and we had a good night!

Chocolate & Heath Bar Pretzels

I made these when the bestie Jordan came in this past weekend. She was nice and had one, but then went on to snack on the plain pretzels. Dang her and her will power! :) She said she was looking forward to trying the fruit salad I made a couple weeks ago, {HERE}. I had to kindly explain to her that I have to make 300 NEW recipes this year! No Repeats!! HaHa!! 

These pretzels were a hit none the less....and the pretzels {glammed up or by themselves} are great! Try them soon with your favorite candy topping! 

*Tip: For smashing the chocolate, freeze the bar for a couple hours and then smash them when they are still wrapped. Clean up is easy that way! 

Pulled Pork Leftovers!!

I was watching Martha the other day and she was talking about different ways to use Pillsbury crescents rolls. This meal should always be in the back of every one's mind...its just too easy. I had some leftover Pulled Pork from this recipe {HERE}, that was going to go bad soon and this was the perfect opportunity to use the rest of it. 

First you will want to roll out your crescents on a pan and take your rolling pin to them. 

Now, take your meat of choice and put a spoonful in the fat side of the roll. Add cheese and a sauce if you'd like. I of course added steak sauce, I'm obsessed! :)

Then ROLL 'EM UP! Martha put cheese on top of hers and brushed hers with an egg....so I did too. {I never see the point of cracking a whole egg for something like that, so I just use egg beaters! Way less wasteful!}

Cook them for however long the dough boy tells you to and then indulge my friend, indulge!


Another left over I did was making an easy lunch out of the pork and my favorite thin buns. 


Self explanatory....I just toasted the bun and heated up the meat. I'm obsessed with leftovers!! :) Enjoy!!

Cake Pudding Pie

This is not so much about the recipe as it is about the equipment. My sister in law first made this for me when I first moved to Oklahoma. We did it without the pudding, and they are so good!

But here is the equipment:

{It's not that clean because I snapped the pic in between batches...}
 Kort knew how much I loved when she made them so she gave me her wonderful Gram's old one. {Grams is no longer here with us, and I know she meant more than a lot to Kortny, and I'm so thankful for knowing her... she always made me feel welcome and was always trying to hook everyone up! Everyone needs a grandma like her in your life!} Needless to say I always think of Grams when I use my panini/omlet/goodness contraption! :)

On to the recipe....
Typically we just do yellow cake mix {my absolute FAVE!!} One box makes about 8. If you want, after the cake has cooled, make a slit in the top and fill it with your favorite pudding, I did cheesecake. I think I'm gonna try chocolate next time!

This is super easy and are perfect for much more than just cake!!

Baked Ziti {Freezer Meal}

When I'm looking for a recipe I always try and go with ones that I will have leftovers. There is no way I'd be able to do something new every single night...that is crazy. So from leftovers I start thinking about freezer meals. I have been testing the waters. It really makes me nervous! This was one that I made two of the platters you see in the pic. One we had that night {and a few nights after} and then I froze the other one! It's been about two weeks and I haven't taken it out yet...but I'm excited that I have an automatic back up just waiting for me! Its a good feeling!

Dr. Pepper Pulled Pork

Have I ever told you I have the best friend in the world? Well, I do. She can usually be found in the "Jordan Approved/Healthy" section on my blog. Well, during one of our many chats, and me constantly discussing my new recipes I told her that I have several that I want to make, but they require dutch ovens. I wanted to invest in one, but couldn't quite justify it. Cut to a couple weeks later and I got a package. Not rare, having my own business I'm constantly getting things delivered to my house. But this one was unbelievably heavy {for its size} and I for sure thought that was weird! And this is what I found when I opened the box...

With a note attached that said "Happy Dutch-Ovening" :) We have a fun sense of humor! I couldn't wait to break in my new appliance!!

The deciding factor for this recipe was that I had left over Dr Pepper from {THIS RECIPE}. I know....my friend Keith would be shocked and upset. Nobody has left over Dr Pepper! Haha, but we are Diet drinkers around here! It looked like a big coke float!

Valentine's Day Cook Off!!

Hope everyone had a wonderful V-Day! I sure did. I've never been a huge V-Day participator. I'm not wildly against it in protest, but I'm not giddy with excitement either...just in the middle. Jake and I usually stay in and cook anyways, so I figured I'd plan a whole night of knocking some of my recipes out. 6 to be exact! :) It was quite an indulgent night, and we started Lost. It was a lot of fun getting to cook so many things together and really helping each other out, when typically its just one of us who cooks. Hope you all enjoy the pics and stories of our night....and try some of the recipes out {maybe not all at once, we had a LOT of leftovers and I didn't even have room for dessert....which is rare!!} :)


Recipe # 31


These were delish! We actually came up with the recipe ourselves! It was inspired by a meal we had at Big Tuna in Norman a couple weeks ago where the shrimp was stuffed with the cream cheese and jalepeno filling. Well, that would of been difficult, and as you may have read with the Cheesecake Stuffed Strawberries...I'm not the best at that. So we improvised. I made the dip the night before and we made these first so we could snack on them while we were cooking. {We didn't end up eating til 9:30....}

What you'll need:
Shrimp
Bacon
1 pkg of softened cream cheese
1/4 cup of cheddar cheese
2 jalepnos

Preheat your oven to 350
First you will want to take out all the seeds of your jalepenos {take all of those necessary precautions...}

Chop the jalepenos up finely, or use a blender/food processor. Combine this with the cream cheese and cheddar cheese. If making it ahead of time just refrigerate until ready to serve.

For the shrimp you will just want to saute them until they are cooked. We used a little olive oil and butter in the pan.

Now, take your bacon and wrap them around the shrimp and secure with a toothpick.

Put on a cookie sheet and cook for about 10-15 min, or until bacon is done. 

Once finished place the bacon wrapped shrimp on a paper towel to drain the grease. While you are doing that, heat the dip in the microwave for about 30 sec, just to soften it up a bit. 

To serve, just dip your shrimp into the cream cheese dip for a scrumptious and spicy appetizer.

I am addicted to amaretto. It is my favorite ingredient to add to a cocktail. You can find the recipe for this {HERE}. It is kind of a morning/brunch cocktail....but it worked out well. Jake liked it too, and we never agree on beverages! If you enjoy pulp in your OJ, you will like this! The way the peaches chopped up created a wonderful fruit pulp, mixed with apple juice and amaretto was amazing! So easy and so sweet! {BTW, we added a bit more amaretto than they suggested, we just kind of eyed it!}


Recipe # 33


Wow oh wow oh wow! This slab of meat was exquisite!! And insanely easy {grill less too, which is great for girls, or guys who aren't familiar with the grill!}. This recipe is found in the Glamour Magazine's "100 Recipes Every Girl Should Know."

Ingredients:
2 12-14 oz boneless rib eye, 1-11/2 in thick at room temperature
Veggie Oil
Salt & Pepper
2 tbsp butter

1. Preheat oven to 500 degrees. Place a cast-iron skillet in the oven and preheat for 5 minutes. Using oven mitts, transfer the skillet to the stove top and heat over moderately high heat. Turn the oven down to 450.
2. Coat the steaks liberally with oil and season well with S&P. Place the steaks in the skillet {no additional oil needed}. Cook, turning once, until well charred, about 5 minutes.
3. Transfer the skillet to the oven and cook for about 4 minutes, turning once, until meat is medium-rare {about 125 at the thickest part of the steak}. Drizzle hot butter over the steaks and let rest for about 5 minutes. Letting it rest helps boost flavor.


Recipe # 34


This is my favorite broccoli dish I have EVER had!! Amazing! I got this recipe from a church cookbook I bought from my co-worker Caleb for his upcoming mission trip. Its a really cool cookbook!! To give credit where credit is due....it was submitted by Joshua Flynt. So whoever you are....thanks!

What you'll need:
2 heads of broccoli, stems removed
2-4 tbsp olive oil
1/4 cup of Parmesan cheese
S & P
Ziploc bag or a plastic bag {I used one that has never been used}

1. Preheat oven to 425 degrees
2. Place broccoli and olive oil in the bag. Season with S & P
3. Toss until the broccoli is well coated in the olive oil
4. Add parm to the bag and toss until evenly distributed
5. Cover baking sheet with aluminum foil and spread broccoli evenly on sheet
6. Cook for 12-15 minutes, or until caramelized


It was unbelievably good! Next time I won't use as much cheese, I felt like there was a lot for a veggie dish.

Along with what ingredients you need, go ahead and add new pants, belt and milk. This may the the richest dessert I've ever had. Although I was full from dinner, I don't think I could eat a full cookie in one setting. RICH. The recipe for these can be found {HERE}. By the time dessert came around we were so engulfed in Lost that we were messy, and didn't really take our time. Which resulted in us not spreading all of our cookies out enough and therefore this happened....

:) haha! We just cut them out....so it didn't quite produce as many as it should.

We also made quite a mess....

Chocolate Cheesecake Stuffed Strawberries

I hope everyone had a Happy Valentines Day!! I sure did :) I HAD to make this little treat for Mo and I the 13th, in order to prep our, uh, minds for V-Day ;) 

This recipe has been all over pinterest and of course I had pinned it ASAP! The recipe for this can be found {HERE}

This was yet another recipe that I must have done something goofy.... The cheesecake filling was a bit sour. I think if I would add more powdered sugar and less vanilla it will be better next time. But, as I was filling the strawberries with my make-shift piping bag {that by the end of everything decided to sprout 2 extra and unexpected holes :/ blah...} I decided that next time I'm going to try cheesecake flavored pudding mix. It would be less stiff and sweeter. I'm sure I'll be trying it sooner than later :) 

The process....

Check out my fun new toy that I got from Jake's family! Who wouldn't love a fondue pot?!?! This was the perfect recipe to whip this baby out! 


They look so pretty....but little does this picture show is all the filling that didn't QUITE make it into the strawberries! So innocent...


This part was disastrous as well :) But in a good way. Who would ever dare complain about chocolate under their fingernails?

Red Velvet & Strawberry Cookies

A few weeks ago we celebrated my friend Kevin's  25th birthday. Just for the record, this was his SECOND surprise party that I've been forced to attend! I wouldn't say he is the easiest person to surprise either. So, props to his wife and my very good friend Ashley for putting together an awesome 25 themed shindig! 

One of the really cute ideas she came up with was at every time the clock was on the "25" we would play a different game. Some that we played were.... Guess how many quarters were in a jar. A "Kevin-themed" mad libs. Guess what the #1 song was on every year of his birthday. And finally, Kevin had to guess who had told different memories or stories of him. It was a lot of fun and Ash made it very personable and entertaining! I hadn't laughed that hard in awhile! Plus he was surprised....so that was a huge bonus! 

As guests she asked us to bring 25 of our favorite treat to share with everyone. I've had the ingredients for these cookies stashed away for awhile just waiting for the perfect opportunity to use them, and Kevin's party was perfect!!

Strawberry Cookies

I doubled the recipe, I just don't see the point of only using half the box. I did forgo to icing...just wasn't feeling it that day. Weird, I know!

Of the two cookies these were my faves. Which I was surprised, I really like white chocolate chips. But this recipe was amazing!! 

Red Velvet White Chocolate Chip Cookies



These cookies were a little different story. I had high expectations for these guys...I really LOVE white chocolate chips!! I'm going to stand firm and say that I did something wrong. I just don't know what....They were a little bitter/salty :( Not horrible, but with the strawberry sitting just right there it was pretty easy to choose. The batter was dry and not what I was expecting. I'll try them again sometime and may alter how I do things. 

You can find the recipe {HERE}. In some of the comments people posted about them being dry also. But then some didn't. So maybe half of us out there need to add less flour :) haha....I WILL try these again and I'll for sure let you know what I changed and if it worked for me!

No-Bake Cheesecake Cups with Concord Grapes

Mom always knows one of the perfect gifts to give me are cookbooks. Christmas is no different! She got me "Sweet & Skinny" by Marisa Churchill.

There are a lot of fun & skinny recipes that I will be trying a lot of! :) I was one happy girl when I unwrapped this!

These cups have 240 calories & 12 grams of fat

Here are the goods you'll need:
  • 6 oz of Kraft reduced-fat cream cheese {neufchatel}
  • 1/4 cup of powdered sugar
  • 2/3 cup frozen lite Cool Whip
  • 1 cup grapes, halved
  • 1/3 cup finely ground honey graham cracker crumbs
Serves 4
Preparation/Freeze time: 35 minutes

Mix cream cheese and powdered sugar on medium speed for 30 seconds, just until combined. Add the frozen whipped topping and beat for 1 minute longer, until the mixture is smooth and free of lumps.

Spoon about 1/4 cup of the cheesecake mixture into four serving glasses. Freeze for 25 minutes to firm the cheesecakes. Place the bowl with the remaining cheesecake mixture in the freezer as well. 

To Serve: Divide the grapes among the chilled cheesecakes, holding back 8 grapes for garnish. Divide all of the graham cracker crumbs among the cups, sprinkling it over the tops. Spoon the remaining cheesecake mixture from the cowl over the cups, dividing it evenly among them. Top each cup with  grape halves, and serve immediately. 

This was a super easy dessert to whip up quickly! 

A few notes: 
*The recipe serves 4, a small 4. It was a good dessert, but it left me wanting more :( BUT that was due to it being so delish!!!
*Our group was half and half on the grapes. Personally you can't go wrong with grapes with anything and thought it was PERFECT! Like I can't believe I would have never thought to pair grapes and cheesecake before. The other half wasn't too fond of it. My suggestion is that if you read the title and think that grapes sound good, you'll love it. If you read the title and are hesitant, then go with another fruit. 

You will love these petite cheesecake and I'm now officially obsessed with grapes and cheesecake together!

Crock Pot Ribs

OK. Let me warn you about the pictures you are about to see. They contain poor photographic skills and bad lighting. AND IT IS BUGGING ME!! I REALLY need to learn to start taking my time with these pics and stop dropping my phone in BBQ sauce!!! 


I made these for Super Bowl Sunday! The day was filled with me putting Ribs in the crock pot and working on Zoe Lane stuff for market and not much paying attention to the football game :/ OOPS! Oh well, I got things done and a few recipes knocked out!

I love ribs. My friend and co worker Justin just made my favorite ribs a couple weeks ago. He is quite the "meatress". haha :) Its a new term. Coined just for this blog and just for Justin. I plan on making his mighty delish ribs sometime in the future {with his help of course!} year, probably this summer. Be on the look out! 

I knew these ribs would not match up. I'm OK with that, just because I know its hard to go wrong with a rib. There are two different kinds of ribs....the ooey gooey kind and the dry rub goodness kind. I realize that half of those words don't make sense, but when you are referring a good slab of meat you sometimes get tongue tied. 

These ribs LITERALLY fell off the bone. Like I lifted a bone from the pot and nothing was on it. Wow. With this recipe you have to broil the ribs for a bit. I snapped a pic during the process and you will think to yourself what road kill did Mal pick up and try and feed her family for SBS!?! I know that's slightly grotesque...sorry about that :/

See all those bones? Crazy. Crazy good anyways. Easy meal with a little effort after the crock pot. Perfect for our calm and quiet Super Bowl Sunday night! 

Chicken & Veggie Hand Pies

This pic SO does not do this little pocket justice! I found this through a pop up add on my computer! How it knew that I keep Pillsbury pizza crust stocked 24/7 in the fridge I'll never know! But it found me. I was a little skeptical whether or not Mo would like this or not. But I catered as much as possible {didn't put any peppers in, extra chicken, etc} and she loved it! The recipe makes 4, and I was expecting to have 2 leftovers...that DID NOT happen. Oops!

Frenchy French Toast

I love me some breakfast food! Especially when I don't have to wake up early in the morning to make it...aka breakfast for dinner!

During our Trip a la Northeast this summer we ventured to an awesome breakfast joint called Buddy's. Where the following pic was taken looking out onto The Naval Academy and some Annapolis scenery. Anyways, while at Buddy's I had some pretty stinkin good french toast. It was made from french bread. Who would of thought....


Fast forward to a couple weeks ago watching Pioneer Woman and Ree was making some of the very same french toast! It just had to make it ASAP! 

You can find the recipe {HERE}. I did not do the berry butter, I'll save that for when I make the other half of the loaf in the freezer! 

In her tutorial she used sourdough, but I went with french bread! Also, a little tip: *Make sure you cook these on low for awhile {instead of higher heat}. Since it is thicker it takes awhile to cook through as oppose to sandwich bread. We had a  few "raw" pieces in our bunch. 

Here is the final product! Can't wait to make this again with the berry butter!!

Brisket Pizza

I used leftovers from my Brie & Brisket Quesadillas and you can find the original recipe {HERE}.

Sadly this one went without a picture....I accidentally deleted it :( RIGHT after I dropped my phone in the BBQ sauce!! OOPS!!

Here is what I did:

1 Pillsbury pizza dough
BBQ sauce
leftover brisket
leftover Brie
mozzarella
steak sauce

Roll the pizza dough out and precook as instructed.

Then spread your fave BBQ sauce over the dough. I did about 1 cup.

Put a combo of the brie and mozzarella cheese allover and then top it with the remaining brisket.

Top with a couple tbsp of steak sauce. This is optional, but I thought it made it perfect!

Finish cooking according to the instructions on the dough can.

Sorry I don't have a pic, but just trust me, it was amazing!!

Shredded Santa Fe Chicken Soup. Unfortunately I didn't get a pic of this one :( It just went too fast!! I served it with a little shredded cheese on top and with tortilla chips. Perfect for a cold day, and perfect to freeze your extras!!

Taco Cupcakes!

These were a lot of fun to try. I found the idea for these {HERE}. I did alter a few things from the recipe. Basically I took the shredded santa fe chicken recipe and used it as the filling. I couldn't find the wonton wrappers, so I used tortillas instead. I just cut the tortilla into thirds and stuffed them in the cupcake pan. Not perfect, but it worked. My only thing I didn't like about the recipe was the cheese queso. I think if we just went with shredded cheese it would taste better. So the idea was good, just a little personal tweaks I'll make next time!
