Strawberry Peach Danish

Over the weekend I made my first summery dessert this year. Peaches. Strawberries. Check and check! 

I meshed this Rustic Strawberry Peach Tart and this Apple Cinnamon Cream Cheese Danish to make one EASY and summery dessert. 

Ingredients:
2 peaches, peeled and pitted
2 cups of sliced strawberries
2 tbsp sugar
1 tsp vanilla
1 tube crescent rolls
1 pkg cream cheese (room temp)
1/2 cup sugar
1 tsp vanilla
3 tbsp flour

for the glaze-
1 cup powdered sugar
4+ tbsp heavy cream
splash of vanilla

Directions:
Preheat oven the 375 degrees.

Take your thinly sliced strawberries and peaches and combine with 2 tbsp of sugar and 1 tsp of vanilla until coated. Cover with plastic wrap and set aside. 

In a small bowl, combine the cream cheese, 1/2 cup sugar, flour and 1 tsp of vanilla and set aside. 

Open the crescents and unroll, leaving them attached as a big rectangle on a baking sheet lined with parchment paper. Make sure there are no holes in the dough. Cut 1/2 inch diagonal strips up each side of the dough with a pizza cutter. Spread the cream cheese mixture down the center of the dough, avoiding your strips. Top with the fruit mixture. 

Fold the 1/2 inch dough pieces up over the filling, alternating sides to form a braided pattern. 

Bake for 20 minutes or until the filling is set and the crescents are golden. Let cool for about 20 minutes. 

While the danish is cooling, combine the powdered sugar, heavy cream and a splash of vanilla. Add more cream if needed to get your desired consistency. Pipe over the cooled danish a serve!


I honestly intended on taking my own pictures but seriously...this dessert went so fast, and I doubled it! This is 100% a crowd pleaser!

Chocolate Cheesecake Stuffed Strawberries

I hope everyone had a Happy Valentines Day!! I sure did :) I HAD to make this little treat for Mo and I the 13th, in order to prep our, uh, minds for V-Day ;) 

This recipe has been all over pinterest and of course I had pinned it ASAP! The recipe for this can be found {HERE}

This was yet another recipe that I must have done something goofy.... The cheesecake filling was a bit sour. I think if I would add more powdered sugar and less vanilla it will be better next time. But, as I was filling the strawberries with my make-shift piping bag {that by the end of everything decided to sprout 2 extra and unexpected holes :/ blah...} I decided that next time I'm going to try cheesecake flavored pudding mix. It would be less stiff and sweeter. I'm sure I'll be trying it sooner than later :) 

The process....

Check out my fun new toy that I got from Jake's family! Who wouldn't love a fondue pot?!?! This was the perfect recipe to whip this baby out! 


They look so pretty....but little does this picture show is all the filling that didn't QUITE make it into the strawberries! So innocent...


This part was disastrous as well :) But in a good way. Who would ever dare complain about chocolate under their fingernails?

Agave Lime Fresh Fruit Salad

I had a couple girls over the other night and thought this was the perfect, EASY dish to put together for a light snack. I'm obsessed with this! How come I haven't been making this my entire life?? It has everything I love: fruit, grapes {I realize that's a fruit, but I really LOVE grapes :)!!}, poppy seeds and a new find agave nectar!! 

I found the recipe {HERE} at the ever wonderful Six Sisters' Stuff. I LOVE that blog! They have a ridiculous amount of recipes!! 

The recipe called for honey, but I decided to go with agave nectar. It is supposed to be a better/healthier sweetener {I tried looking for nutrition facts, but the honey I have is local and didn't have any :/}. It tasted just as sweet but it is less sticky and not as thick. A bonus in my book.

It is definitely more of a summer dish, but I wasn't about to hold off 4 more months to try this perfect salad!! I had to replace kiwi, which isn't in season and therefore nowhere to be found, with raspberries. 

I can't say enough good things about this fruity and delicious salad!! Here is another pretty pic!!
