This is a healthier version of your everyday breakfast casserole. YEA!!! This challenge would be 100% easier if I could just pick any indulgent dessert I come across! I really am working hard on finding a balance in this.

I double this recipe, which I realized calls for about 10-12 eggs. That's a lot of cholesterol, fat & calories! So I opted for 1/2 a cup of regular egg beaters & 2 cups of egg whites. I also used turkey sausage & reduced fat cheese. Top with salsa and you are good to go!
