Herb-Crusted Pork Loin Roast

This along with {Jones' Baked Veggies} was our Oscar meal. We just LOVE awards shows around here, so much fun to watch! 

It was when I was making this meal that I kind of had a revelation. I'm COOKING!! Not just hamburger meat, but Herb-Crusted Pork Loin Roast!! Holy cow! It was a good feeling to say the least! The name was just so fancy sounding :) I know I'm not a huge chef, nor will I ever be, and I'm ok with that....As long as I can go into a kitchen and be comfortable in my skin is what this whole challenge is about. I will still have to look up conversions and I am hopefully going to end this year with making my own made up recipe. Here's to hoping!! 

Anyways, about the herb-crusted pork loin roast... As if you couldn't tell, I'm obsessed with 6 Sisters' Stuff and is just another one of their phenom recipes. It can be found {HERE} and it tasted amazing. I halved the recipe for only 1lb of pork loin. With my time I just took about 5 minutes off and kept an eye on it. I don't have a meat thermometer {well, I do, but it was cheap and I don't know how to use it....} so I cut it to check on the middle. 

So, go be fancy and cook you up some herb-crusted anything!!! :)

Chicken Dumpling Casserole

Who just doesn't love a good 'ol casserole? This simple recipe was so good and reminds me of good times. No time in particular, just gives you that warm and fluffy feeling inside :)

A couple notes: I didn't read her "updated" version until after I went shopping {I've GOT to stop doing that!! :/ }, and I had no bouillon. So, when I was boiling the chicken I seasoned the water with plenty of salt, pepper, onion and garlic powder and rosemary. I don't even know if those things go well together, but it turned out wonderfully, so I'm not going to second guess my decision! I also added celery to give it a little pot pie feel. Such a delicious and heart warming meal! You must try it on our next chilly day.

I made this for one of mine & Jake's Lost nights. We, um, may have watched 8 episodes in one night. It was just getting too good! Such an easy little meal for our TV night together!!

This recipe gave me the idea to make a breakfast version of this. Like a McDonald's McGriddle version type thing with sausage, pancake and syrup! Hey-O! I'm gonna try and make that version soon!!

Pan-Fried Ribeye Steak

Molly got so envious of Jake & mine's V-Day dinner, that I decided to treat her with some ribeye. I used this recipe {HERE}. I'm not going to lie, I like V-Day version better....this seasoning was a little too salty for me :( So, if you are going to use one, use {THIS ONE}!! 

I even double checked to make sure I didn't use too much seasoning, and I didn't {according to the recipe}. It was still a wonderful dinner between us sisters and we had a good night!


I just LOVE colorful food! 

Pulled Pork Leftovers!!

I was watching Martha the other day and she was talking about different ways to use Pillsbury crescents rolls. This meal should always be in the back of every one's mind...its just too easy. I had some leftover Pulled Pork from this recipe {HERE}, that was going to go bad soon and this was the perfect opportunity to use the rest of it. 

First you will want to roll out your crescents on a pan and take your rolling pin to them. 

Now, take your meat of choice and put a spoonful in the fat side of the roll. Add cheese and a sauce if you'd like. I of course added steak sauce, I'm obsessed! :)

Then ROLL 'EM UP! Martha put cheese on top of hers and brushed hers with an egg....so I did too. {I never see the point of cracking a whole egg for something like that, so I just use egg beaters! Way less wasteful!}

Cook them for however long the dough boy tells you to and then indulge my friend, indulge!


Another left over I did was making an easy lunch out of the pork and my favorite thin buns. 


Self explanatory....I just toasted the bun and heated up the meat. I'm obsessed with leftovers!! :) Enjoy!!

Baked Ziti {Freezer Meal}

When I'm looking for a recipe I always try and go with ones that I will have leftovers. There is no way I'd be able to do something new every single night...that is crazy. So from leftovers I start thinking about freezer meals. I have been testing the waters. It really makes me nervous! This was one that I made two of the platters you see in the pic. One we had that night {and a few nights after} and then I froze the other one! It's been about two weeks and I haven't taken it out yet...but I'm excited that I have an automatic back up just waiting for me! Its a good feeling!

Dr. Pepper Pulled Pork

Have I ever told you I have the best friend in the world? Well, I do. She can usually be found in the "Jordan Approved/Healthy" section on my blog. Well, during one of our many chats, and me constantly discussing my new recipes I told her that I have several that I want to make, but they require dutch ovens. I wanted to invest in one, but couldn't quite justify it. Cut to a couple weeks later and I got a package. Not rare, having my own business I'm constantly getting things delivered to my house. But this one was unbelievably heavy {for its size} and I for sure thought that was weird! And this is what I found when I opened the box...

With a note attached that said "Happy Dutch-Ovening" :) We have a fun sense of humor! I couldn't wait to break in my new appliance!!

The deciding factor for this recipe was that I had left over Dr Pepper from {THIS RECIPE}. I know....my friend Keith would be shocked and upset. Nobody has left over Dr Pepper! Haha, but we are Diet drinkers around here! It looked like a big coke float!

Valentine's Day Cook Off!!

Hope everyone had a wonderful V-Day! I sure did. I've never been a huge V-Day participator. I'm not wildly against it in protest, but I'm not giddy with excitement either...just in the middle. Jake and I usually stay in and cook anyways, so I figured I'd plan a whole night of knocking some of my recipes out. 6 to be exact! :) It was quite an indulgent night, and we started Lost. It was a lot of fun getting to cook so many things together and really helping each other out, when typically its just one of us who cooks. Hope you all enjoy the pics and stories of our night....and try some of the recipes out {maybe not all at once, we had a LOT of leftovers and I didn't even have room for dessert....which is rare!!} :)


Recipe # 31


These were delish! We actually came up with the recipe ourselves! It was inspired by a meal we had at Big Tuna in Norman a couple weeks ago where the shrimp was stuffed with the cream cheese and jalepeno filling. Well, that would of been difficult, and as you may have read with the Cheesecake Stuffed Strawberries...I'm not the best at that. So we improvised. I made the dip the night before and we made these first so we could snack on them while we were cooking. {We didn't end up eating til 9:30....}

What you'll need:
Shrimp
Bacon
1 pkg of softened cream cheese
1/4 cup of cheddar cheese
2 jalepnos

Preheat your oven to 350
First you will want to take out all the seeds of your jalepenos {take all of those necessary precautions...}

Chop the jalepenos up finely, or use a blender/food processor. Combine this with the cream cheese and cheddar cheese. If making it ahead of time just refrigerate until ready to serve.

For the shrimp you will just want to saute them until they are cooked. We used a little olive oil and butter in the pan.

Now, take your bacon and wrap them around the shrimp and secure with a toothpick.

Put on a cookie sheet and cook for about 10-15 min, or until bacon is done. 

Once finished place the bacon wrapped shrimp on a paper towel to drain the grease. While you are doing that, heat the dip in the microwave for about 30 sec, just to soften it up a bit. 

To serve, just dip your shrimp into the cream cheese dip for a scrumptious and spicy appetizer.

I am addicted to amaretto. It is my favorite ingredient to add to a cocktail. You can find the recipe for this {HERE}. It is kind of a morning/brunch cocktail....but it worked out well. Jake liked it too, and we never agree on beverages! If you enjoy pulp in your OJ, you will like this! The way the peaches chopped up created a wonderful fruit pulp, mixed with apple juice and amaretto was amazing! So easy and so sweet! {BTW, we added a bit more amaretto than they suggested, we just kind of eyed it!}


Recipe # 33


Wow oh wow oh wow! This slab of meat was exquisite!! And insanely easy {grill less too, which is great for girls, or guys who aren't familiar with the grill!}. This recipe is found in the Glamour Magazine's "100 Recipes Every Girl Should Know."

Ingredients:
2 12-14 oz boneless rib eye, 1-11/2 in thick at room temperature
Veggie Oil
Salt & Pepper
2 tbsp butter

1. Preheat oven to 500 degrees. Place a cast-iron skillet in the oven and preheat for 5 minutes. Using oven mitts, transfer the skillet to the stove top and heat over moderately high heat. Turn the oven down to 450.
2. Coat the steaks liberally with oil and season well with S&P. Place the steaks in the skillet {no additional oil needed}. Cook, turning once, until well charred, about 5 minutes.
3. Transfer the skillet to the oven and cook for about 4 minutes, turning once, until meat is medium-rare {about 125 at the thickest part of the steak}. Drizzle hot butter over the steaks and let rest for about 5 minutes. Letting it rest helps boost flavor.

This is my favorite broccoli dish I have EVER had!! Amazing! I got this recipe from a church cookbook I bought from my co-worker Caleb for his upcoming mission trip. Its a really cool cookbook!! To give credit where credit is due....it was submitted by Joshua Flynt. So whoever you are....thanks!

What you'll need:
2 heads of broccoli, stems removed
2-4 tbsp olive oil
1/4 cup of Parmesan cheese
S & P
Ziploc bag or a plastic bag {I used one that has never been used}

1. Preheat oven to 425 degrees
2. Place broccoli and olive oil in the bag. Season with S & P
3. Toss until the broccoli is well coated in the olive oil
4. Add parm to the bag and toss until evenly distributed
5. Cover baking sheet with aluminum foil and spread broccoli evenly on sheet
6. Cook for 12-15 minutes, or until caramelized


It was unbelievably good! Next time I won't use as much cheese, I felt like there was a lot for a veggie dish.

I think this was one of my first Pinterest Pins. Who could NOT pin this?!?! This recipe can be found on this super cute blog....{HERE}. Molly was very excited when I brought these back for her!! She said it was her favorite I've made so far! haha

Along with what ingredients you need, go ahead and add new pants, belt and milk. This may the the richest dessert I've ever had. Although I was full from dinner, I don't think I could eat a full cookie in one setting. RICH. The recipe for these can be found {HERE}. By the time dessert came around we were so engulfed in Lost that we were messy, and didn't really take our time. Which resulted in us not spreading all of our cookies out enough and therefore this happened....

:) haha! We just cut them out....so it didn't quite produce as many as it should.

We also made quite a mess....



We HAD to get back to Lost!! :)

Crock Pot Ribs

OK. Let me warn you about the pictures you are about to see. They contain poor photographic skills and bad lighting. AND IT IS BUGGING ME!! I REALLY need to learn to start taking my time with these pics and stop dropping my phone in BBQ sauce!!! 


I made these for Super Bowl Sunday! The day was filled with me putting Ribs in the crock pot and working on Zoe Lane stuff for market and not much paying attention to the football game :/ OOPS! Oh well, I got things done and a few recipes knocked out!

I love ribs. My friend and co worker Justin just made my favorite ribs a couple weeks ago. He is quite the "meatress". haha :) Its a new term. Coined just for this blog and just for Justin. I plan on making his mighty delish ribs sometime in the future {with his help of course!} year, probably this summer. Be on the look out! 

I knew these ribs would not match up. I'm OK with that, just because I know its hard to go wrong with a rib. There are two different kinds of ribs....the ooey gooey kind and the dry rub goodness kind. I realize that half of those words don't make sense, but when you are referring a good slab of meat you sometimes get tongue tied. 

These ribs LITERALLY fell off the bone. Like I lifted a bone from the pot and nothing was on it. Wow. With this recipe you have to broil the ribs for a bit. I snapped a pic during the process and you will think to yourself what road kill did Mal pick up and try and feed her family for SBS!?! I know that's slightly grotesque...sorry about that :/

See all those bones? Crazy. Crazy good anyways. Easy meal with a little effort after the crock pot. Perfect for our calm and quiet Super Bowl Sunday night!

This pic SO does not do this little pocket justice! I found this through a pop up add on my computer! How it knew that I keep Pillsbury pizza crust stocked 24/7 in the fridge I'll never know! But it found me. I was a little skeptical whether or not Mo would like this or not. But I catered as much as possible {didn't put any peppers in, extra chicken, etc} and she loved it! The recipe makes 4, and I was expecting to have 2 leftovers...that DID NOT happen. Oops!

Brisket Pizza

I used leftovers from my Brie & Brisket Quesadillas and you can find the original recipe {HERE}.

Sadly this one went without a picture....I accidentally deleted it :( RIGHT after I dropped my phone in the BBQ sauce!! OOPS!!

Here is what I did:

1 Pillsbury pizza dough
BBQ sauce
leftover brisket
leftover Brie
mozzarella
steak sauce

Roll the pizza dough out and precook as instructed.

Then spread your fave BBQ sauce over the dough. I did about 1 cup.

Put a combo of the brie and mozzarella cheese allover and then top it with the remaining brisket.

Top with a couple tbsp of steak sauce. This is optional, but I thought it made it perfect!

Finish cooking according to the instructions on the dough can.

Sorry I don't have a pic, but just trust me, it was amazing!!

Shredded Santa Fe Chicken Soup. Unfortunately I didn't get a pic of this one :( It just went too fast!! I served it with a little shredded cheese on top and with tortilla chips. Perfect for a cold day, and perfect to freeze your extras!!

Taco Cupcakes!

These were a lot of fun to try. I found the idea for these {HERE}. I did alter a few things from the recipe. Basically I took the shredded santa fe chicken recipe and used it as the filling. I couldn't find the wonton wrappers, so I used tortillas instead. I just cut the tortilla into thirds and stuffed them in the cupcake pan. Not perfect, but it worked. My only thing I didn't like about the recipe was the cheese queso. I think if we just went with shredded cheese it would taste better. So the idea was good, just a little personal tweaks I'll make next time!

Brie & Brisket Quesadillas

One of my goals this year is to learn my way around meat in the kitchen. I went to the store the other day and stocked up on some meat cuts. Ribs, Pork Shoulder and Brisket, my fave!! I'm starting with crock pot meals to ease my way to the almighty and very scary grill. If you haven't figured it out already, I'm in love with my crock pot. Got a crock recipe? Bring it my way!!! 

I was so excited to try this brisket recipe. It is my BBQ restaurant staple! So when I found this on Pinterest, it was moved to the top of my "to try" list! I'm not going to lie, I've had better brisket. It was very good, but not smoked or grilled good. It was crock pot good. I was a little thrown off when I tasted it {without the BBQ sauce at first} it reminded me too much of roast beef, which is NOT my fave dish...sorry mom! But once it was served with BBQ it tasted wonderfully. 

The recipe, which can be found {HERE} also called for Brie. I'm not entirely sure how I even knew this was cheese, I suppose I just assumed. But that wheel of cheese came very difficult to find, but I WAS looking for it in the wrong place. Weird. I was nervous when serving because none of us had tried Brie before, but it was very good, and I'm pretty picky about my cheese! 

I didn't do her mango bbq sauce, I was feeding a lot of people and didn't want to get too diverse. Speaking of feeding people, guess how many servings this brisket served? 15!!! Well worth it! I do hope you try this recipe soon. You can't go wrong for a big group or a week's worth of leftovers! 

Sorry for all the paper plate pics {you'll be seeing a lot of them lately}. I've found that when I cook a big dinner the last thing I want to do is do all those dishes! :)

Philly Cheese Steak Sloppy Joes

Yet another *Pinterest* addiction tackled! WooHoo! I did the math and to complete the challenge I would need to do 25 new recipes each month. Did you just gasp, and your eyes widen? Because MINE SURE DID!!! :) Luckily I am right on track! Whew. Now, if only I could catch up on blogging :/ 

I made these for Mo, Jake and I one night. Delicious!! I'm always looking for hamburger meat meals! This recipe can be found {HERE}. Really check that site out! It is FILLED with all sorts of great recipes! I'm trying another one later this week. 

I added green chilies left over from {THIS} recipe, the Southwest Breakfast Bake. I loved the steak sauce. It made this dish!! I served these with toasted Sara Lee Thin Style Buns, about 100 calories each. Very good and a little juicy :) Great recipe option for a busy weeknight!

Grilled Chicken Ratatouille

The name alone intrigued me to make this one! When people asked what I was making that night, I felt very proper and Martha-like....my dream :) I found this recipe on a site that offers 20 easy grilled chicken recipes, which I always have in abundance in my freezer. I found this recipe {HERE}. Check out those other 19 while your at it!! I was very easy, I brought out the classic George Foreman, and grilling the veggies were so delish! My only suggestion would be to marinate the chicken in the rub for maybe 30 minutes or so. It was just a little plain on the inside, other than that it was great. The herb mixture was very good, and it was my first time ever using marjoram. 

As I've stated before in previous posts...I really am working hard on making this "Year of trying NEW THINGS" as healthy as possible. It all reminds me of my very best friend in the whole wide world: JORDAN!  Definitely "JORDAN APPROVED!" She has been begging me to include her in my blog forEVER now :) But as I am talking about leading a healthy lifestyle there is no one more worthy of a special blog post dedication! 

Jordan Jordan Jordan.....what to say about Jordan. HeHeHe...this could get interesting! Jordan has the best personality of anyone I know. We first met at church and a short time later we became inseparable on a trip to CHI-town for a wedding. She is absurdly competitive {for instance, when in Chicago, barely knowing each other, we were in our hotel playing Speed and she made us play over and over until she won the game :)} Little stuff like that... Until this past year she may have been the only real Lion's fan and is not afraid to tell anyone :) It's what everyone loves about her. She has the best silent laugh anyone has ever "heard" and on top of all of that, she is a wonderful person all around, and anyone would be blessed to call her a friend, but I'm lucky enough she is my BESTEST!! :) 

As long as I have known J, she has been a very healthy person. Constant work outs, eating right and dresses cute....always! Anyone would agree. Well, over the past year J has been diagnosed with Crohn's disease {BTW, "Crohn's isn't recognized by my spell check. Hil MAY have gotten it right on that sign :) Jordan, you should get that fixed poster child!}. It's been a crazy year, and she has definitely had her ups and downs with it all. Although this is something that she will have to live with for the rest of her life, she hasn't ever been negative about it. In fact she has done a lot to help raise awareness and is now the "OKC poster child" for the OKC Crohn's walk and will have the opportunity to share her testimony of how God has healed and given her strength. 

While all of this stuff was going on last year it made me think of how interesting her situation is. A person who her entire life has dedicated herself and time to be as healthy as possible, running a full marathon, multiple halves and eats like a rabbit, could be diagnosed with this disease which is normally discovered by living an unhealthy lifestyle, similar to mine!! She is a very strong and wonderful woman and I couldn't say more nice things about her!


Anyways, that is just a few things I could possibly talk about J Brock! One day I'll cook together a blog that just lists all of the hilarity there is to talk about that girl!

Easy Potato Soup

I'm obsessed with the crock pot right now. I have actually made this before, but added kielbasa sausage, so I'm counting it as something new :)

I also doubled the recipe because Jake & Mo loved it so much! I set it up before I went to work and when I came home I added the cream cheese and sausage and voila! Dinner!!

The recipe is from this website {HERE}. It is a really cute site, her tag line is "A pinch of June Cleaver, A dash of Martha Stewart and a whole lotta Mommy". I recently started watching {anything & everything} Martha  and I'm more than obsessed!! I love everything she does, and hey who said a little jail time isn't worth it to achieve your dreams? :) haha

This is a perfect cold day recipe and the ingredients are nothing wild. We have some kept in the freezer for some safe keeping :)

Lemon Pepper Chicken

Tonight I was cooking for one, so I decided to go easy and healthy. I actually didn't follow a recipe on this one....but its pretty self explanatory. I just looked up online how long to cook chicken in the oven and followed accordingly. 

First I marinated my chicken overnight in Lemon Pepper Marinade. I marinated it frozen and by the time it came to cook it was defrosted. I don't know if that is a proper way at all, but I am not a seasoned defroster, so when I can get around it, I do. 

Before sticking it in the oven I seasoned it with Lawry's, pepper, garlic salt and put a little bit of new marinade (I didn't quite use all of the bottle when originally marinating so that I could put it on my cooked chicken and veggies) on top. 

I cooked each side of the chicken breasts for 15 minutes at 375 degrees. When flipping I seasoned the other side. It cooked perfectly! Super easy....one day I'll try a more DARING chicken dish, but I can't help but be super paranoid with that stuff :/ 

As for my veggies: I'm absolutely obsessed with zucchini, so I always look for it in those frozen packs that you just stick in the microwave. Walmart, where I usually do my shopping (ugh...I dislike it greatly, I wish they had HEB's in OK!!!) never has a California blend...ever! But I can't help shopping there because they are so cheap. Sometimes I go to Target, especially for their grapes. They have the absolute best grapes ever! But I get in trouble because their clothes and housewares are just so cute!! And I always feel like they never have everything on my list (which I don't think is ever too demanding...). There is always Homeland, but I feel like they are so overpriced when it comes to what you get in return. HEB on the other hand is always CLEAN & CHEAP & their selection is great. Well, this blog got off on an unexpected grocery shopping tangent....sorry!! Where I was going with this was....Target has the Cali blend that you can microwave, and it is THE BEST!!! 


We have Zoe right now and she is such a great blog buddy! Her snoring has such a soothing tone :) Molly and I were talking tonight and if I get married before I have a niece, Bry and Zoe will be walking down together. (It may just happen anyway...I mean, wouldn't she be just ADORABLE in a jeweled head piece and a tutu?)

Chick-fil-A Nugget Knock Off

I'm not going to lie to you, these are not as good as the perfect piece of chicken Chick-fil-A produces. But, they are not that far behind. A fairly easy recipe too if you don't mind the whole frying thing. I think I'm going to try and bake them next time. I can tell you 100% that I will NEVER fry another piece of food again until I get one of those fancy wire cage things that you can just dip into the oil. Ugh :/ Zoe did not appreciate that I  had the oil too hot at first, she barked and then immediately hid. 

Here are the goods you need!
Serves about 4 people {35ish nuggs} 
2-4 Hour prep time

4 chicken breasts
2 cups of milk
2 eggs
2 1/2 cups of flour
4 TBSP of powdered sugar {for sure the special ingredient!!}
4 TSP of salt
2 TSP of pepper
Peanut Oil

First you will need to whisk your eggs and slowly pour in the milk into a bowl. Then cut up your chicken breasts into bite sized pieces and trim off any fat.

Put cut up chicken into the egg and milk mixture for 2-4 hours and just keep it in the fridge. I took mine out and left it on the counter for the last 30 minutes so that it wasn't so cold going into the oil.

After the chicken is finished marinating you will want to start heating about 2 inches of oil on medium heat. {This is where Zoe went crazy because the directions I used said that if you drip a little water into the oil and just sizzles a little and doesn't pop it is at the right temp, but if it pops a lot it is too hot. Well, mine popped A LOT!! I suggest buying a handy thermometer and wait until it becomes 350 degrees.} combine your dry ingredients into a bowl and mix them pretty well.

Take your chicken and coat them with the flour mixture, making sure to get it all covered. 

Depending on how big your pot is, put in about 8-10 nuggs at a time turning them over after about 1 minute. 

After a few minutes take them out {check the bigger ones to make sure there isn't any pink in the middle} and drain them on a paper towel covered plate. 



These guys were delicious and I was very excited that I had some left over packets of CFA's Honey Roasted BBQ Sauce, my absolute FAVE!!! Like I said, not quite as good as Chick-fils, my guess is something in the batter... but anyways you can definitely taste the powdered sugar and the extra touch of sweet was very good!
