Brisket Pizza

I used leftovers from my Brie & Brisket Quesadillas and you can find the original recipe {HERE}.

Sadly this one went without a picture....I accidentally deleted it :( RIGHT after I dropped my phone in the BBQ sauce!! OOPS!!

Here is what I did:

1 Pillsbury pizza dough
BBQ sauce
leftover brisket
leftover Brie
mozzarella
steak sauce

Roll the pizza dough out and precook as instructed.

Then spread your fave BBQ sauce over the dough. I did about 1 cup.

Put a combo of the brie and mozzarella cheese allover and then top it with the remaining brisket.

Top with a couple tbsp of steak sauce. This is optional, but I thought it made it perfect!

Finish cooking according to the instructions on the dough can.

Sorry I don't have a pic, but just trust me, it was amazing!!

Shredded Santa Fe Chicken

Oh yeah, I love LEFTOVERS!!! 3 recipes in 1! WooHoo!! 

I got this recipe {HERE} from my friend Leslie's blog. She is always posting the funnest recipes AND craft tutorials!

Anyways, once she posted the shredded chicken recipe I knew I had to try it soon! 

Recipe # 20
Shredded Santa Fe Chicken Soup. Unfortunately I didn't get a pic of this one :( It just went too fast!! I served it with a little shredded cheese on top and with tortilla chips. Perfect for a cold day, and perfect to freeze your extras!!

I served this on a low carb tortilla with some cheese and some salsa!

Taco Cupcakes!

These were a lot of fun to try. I found the idea for these {HERE}. I did alter a few things from the recipe. Basically I took the shredded santa fe chicken recipe and used it as the filling. I couldn't find the wonton wrappers, so I used tortillas instead. I just cut the tortilla into thirds and stuffed them in the cupcake pan. Not perfect, but it worked. My only thing I didn't like about the recipe was the cheese queso. I think if we just went with shredded cheese it would taste better. So the idea was good, just a little personal tweaks I'll make next time!

Southwest Breakfast Burrito {leftovers}

Yea for leftovers....and so so so many more to come this year! :) Well I figured I would make this one of my new recipes. This is the leftovers of {THIS} recipe. Healthy too! 

First you will need to preheat the Broil option on your oven

Now, scoop up your serving of Southwest Breakfast Bake and cut it up into small pieces and microwave for about a minute {I did this because I wasn't sure if it would be warm enough on broil without burning the tortilla}


Now scoop this onto your reduced fat tortilla with whatever toppings you enjoy! I chose some extra cheese and frozen tri-colored peppers I keep in the freezer {an absolute STAPLE, I use them on EVERYTHING!!!}

Broil this for about 4 minutes. WATCH THEM....I burn too often on Broil, and my oven cooks hot. 

Then I put some salsa and a little quac. Perfect leftover meal, if you can't tell I LOVE breakfast burritos! :)
